Einstein's Lemon Yogurt Bread

This is a lovely bread, simple yet tasty.

  • 3 cups flour
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • 1 teaspoon salt
  • 3 eggs
  • ¾ cup vegetable oil
  • 1 ½ cup sugar
  • 2 cups lemon yogurt
  • 2 tablespoons fresh lemon juice

Preheat the oven to 325 degrees F.

Sift the flour, baking soda, baking powder and salt into a separate bowl. Lightly beat the eggs in another large bowl. Add the vegetable oil and sugar to the eggs and mix well. Add the yogurt and lemon juice and flour mixture. Mix well but do not over mix.

Pour into two well-greased loaf pans. Bake for one hour until lightly browned and a cake tester or toothpick inserted into the centre comes out clean.
