Pistachio Honey Spread

When you can’t get good cream, use this spread instead.

Makes approximately ¾ cup.

  • 1/3 cup unsalted shelled pistachio nuts
  • 4 ounces cream cheese, softened
  • 2 teaspoons honey
  • 2 teaspoons lime juice
  • Chopped shelled pistachio nuts for garnish (optional)

Place the nuts in the container of a food processor. Process until the nuts are finely chopped. Add the cream cheese, honey and lime juice. Process for 15 seconds, or just until smooth, stopping to scrape down the sides of the container, if necessary.

Scrape the spread into a small bowl. Garnish with the additional chopped nuts, if desired. Serve immediately or cover and refrigerate. To serve, let stand for 10 minutes at room temperature to soften.
